About Study Course

Objective

To form fundamental basic knowledge in chemistry, which will be helpful in further studies in biochemistry and nutrition science.

Preliminary Knowledge

Inorganic and organic chemistry in the scope of the secondary school course.

Learning Outcomes

Knowledge

1.After completing the study course, students will be able to: • identify and classify the main classes of inorganic compounds; • characterize the typical chemical properties of the main classes of inorganic compounds; • identify functional groups of organic compounds and classify organic compounds according to the type and number of functional groups; • name organic compounds according to the principles of the nomenclature of the International Union of Pure and Applied Chemistry (IUPAC); • characterize the typical chemical properties of the main classes of organic compounds and justify the possibilities of their mutual transformations.

Skills

1.As a result of the study course, the student will be able to: • classify and name inorganic and organic compounds; • construct and interpret chemical formulae and structural formulae; • characterise the main chemical properties and transformations of compounds; • write and balance chemical reaction equations; • identify functional groups of organic compounds and apply IUPAC nomenclature; • analyse the use of chemical compounds and independently use scientific literature sources.

Competences

1.A student who has completed the basic course in chemistry: • will be able to assess the belonging of various substances, including basic nutrients and spices, to a certain class of compounds; • will predict their properties and reactions in various food preparation and biochemical processes.

Course structure and assessment regulations

The final assessment of the study course consists of:

  • The report, the 1st test and the 2nd test (50 % of the total assessment);
  • The exam (50 % of the total assessment).

The cumulative assessment can be obtained if all of the following conditions are met:

  • All tests are passed successfully at the first time;
  • The report is submitted on time and is successfully assessed;
  • The average score of the report and colloquia is at least 8.0 points (before rounding).

Presentation

Students individually or in pairs prepare a report on one inorganic and two organic substances used in the food industry. The report should include the molecular and structural formulas of the selected substances, IUPAC and trivial names, belonging to chemical compound classes, characteristic functional groups, possibilities of use and other relevant or interesting information about the selected substances. The work should be developed using reliable scientific and educational literature sources, correctly formatting references and the list of used literature.

Inorganic compounds and their mutual interactions. The test includes the structure of the atom, chemical bonds, classification and nomenclature of inorganic compounds, types of chemical reactions, balancing of reactions and oxidation-reduction processes.

2.Test

Organic compounds and their interrelations. The test includes the classification and nomenclature of organic compounds, functional groups, isomers, structural formulae, chemical properties of the main classes of compounds and regularities of organic reactions.

Exam

10 points

The exam consists of two parts and covers the topics of both tests (basic questions of general, inorganic and organic chemistry, classification and nomenclature of compounds, the course and equalization of chemical reactions, as well as the characterization of the structure and chemical properties of compounds).
